Twist the top of the cheesecloth to form a loose ball of “cheese.” Refrigerate for at least 15 minutes, up to 24-36 hours for a firmer texture.
  8. Once you’ve finished roasting the vegetables, assemble a crudités platter with the “cheese,” vegetables, and hummus or baba ganoush. Optionally, drizzle roasted vegetables with tahini and maple syrup before dipping them into the “cheese.”
