Mint Brownie Cookies

There are two things that you just can’t go wrong with: Brownies and YORK Peppermint Patties. These mint brownie cookies might be the perfect combination of those delicious desserts.

You might seek some cookie recipes like Jello Frosted Cookies or some typical Star Cookies, but this one right here leaves a lasting impression in your mouth. Who doesn’t love a mint chocolate combination?

Put them together into a cookie, and you’ve got some really delicious Mint Brownie Cookies.

Mint Brownie Cookies
 
A mix of brownies and peppermint patties make these cookies deliciously minty!
Ingredients
  • ⅔ cup shortening
  • 1⅓ cups packed light brown sugar
  • 1 TB water
  • 1 tsp. vanilla extract
  • 2 eggs
  • 1¼ cups flour
  • ⅓ cup cocoa
  • ½ tsp. salt
  • ¼ tsp. baking soda
  • 8 oz. pkg. YORK Mini Peppermint Patties
Instructions
  1. Heat oven to 350 degrees.
  2. Beat shortening, brown sugar, water, and vanilla in a large bowl on medium speed until well blended.
  3. Add eggs; beat well.
  4. Stir together flour, cocoa, salt and baking soda.
  5. Gradually add to sugar mixture, beating on low speed until blended.
  6. Stir in WHOLE peppermint patties. {the tendency is to cut the patties in half, but DON'T! They'll ooze and melt and make a mess!}
  7. Drop by rounded tablespoons 2" apart onto engrossed cookie sheet.
  8. Bake 7-9 minutes. Cookies will appear soft and moist. Do not overbake.
  9. Cook 2 minutes and remove to wire rack for cooling.

These cookies are simple to make and when you see the oozing white of the Peppermint Patties, you’d better get that glass of milk ready!
