Mint Brownie Cookies
- ⅔ cup shortening
- 1⅓ cups packed light brown sugar
- 1 TB water
- 1 tsp. vanilla extract
- 2 eggs
- 1¼ cups flour
- ⅓ cup cocoa
- ½ tsp. salt
- ¼ tsp. baking soda
- 8 oz. pkg. YORK Mini Peppermint Patties
- Heat oven to 350 degrees.
- Beat shortening, brown sugar, water, and vanilla in a large bowl on medium speed until well blended.
- Add eggs; beat well.
- Stir together flour, cocoa, salt and baking soda.
- Gradually add to sugar mixture, beating on low speed until blended.
- Stir in WHOLE peppermint patties. {the tendency is to cut the patties in half, but DON'T! They'll ooze and melt and make a mess!}
- Drop by rounded tablespoons 2" apart onto engrossed cookie sheet.
- Bake 7-9 minutes. Cookies will appear soft and moist. Do not overbake.
- Cook 2 minutes and remove to wire rack for cooling.
