Lemon Chicken Orzo is a great recipe that everyone in the family will love!  If someone doesn’t like green beans, they’ll be able to pick them out!

The lemon is light but flavorful and the orzo is the perfect addition to this dish!  This Lemon Chicken Orzo works well with garlic bread and is great as leftovers the next day!

This chicken casserole is easy to make and can be ready within 30 minutes - with things you probably already have on hand!
Ingredients
  • 1 lb. chicken breasts
  • ½ tsp. each salt & black pepper
  • 1 can {14.5. oz.} chicken broth
  • ⅓ cup lemon juice
  • 2 tsp. honey
  • 2½ TB. low-fat sour cream
  • ¾ cup orzo
  • 8 oz. green beans, cut into 1 -inch pieces
Instructions
  1. Cut chicken into 1 inch cubes. Sprinkle with salt and pepper.
  2. Pour broth and lemon juice into a large pot; bring to a boil and add chicken.
  3. Cover and reduce heat to medium.
  4. Cook for 9 minutes, or until chicken is cooked through.
  5. Remove chicken from pot; set aside. Increase heat to high and cook sauce for 5 minutes.
  6. Stir in remaining ¼ tsp. salt and pepper.
  7. Whisk in honey and sour cream.
  8. Add 2 cups water to pot and bring to a boil.
  9. Add orzo and cook for 10 minutes or until pasta is tender and most liquid has been absorbed.
  10. Add green beans to pot for final 4 minutes of cook time.
  11. Stir chicken back into the pot and serve!
