Monterey Chicken

This Monterey Chicken recipe originally came from All Things Simple.

I found it on Pinterest {of course!} and I’m always up for trying out new recipes that are EASY.  When the whole family digs it, I feel it’s my duty to share it with you so that you can add one more easy and delicious recipe to your list of weekly meals!

This Monterey Chicken recipe took about 15-20 minutes to whip up start to finish, and was super yummy, made for great leftovers, and is easy to make with things you probably have in you fridge and cupboard already!

 Grill the chicken first – for about 5 minutes, or until the pink is gone on the outside.  I used my George Foreman grill {a must in the Phoenix summers!}

Then, add your toppings, starting with some BBQ sauce on each chicken breast!

Not gonna win any photo awards for this one! {but you get the idea of stacking the ingredients on top of the chicken.

Monterey Chicken is an easy dinner you can whip up with just a few ingredients and 15 minutes!
Ingredients
  • 4-6 chicken breasts
  • BBQ sauce
  • shredded Colby Jack cheese
  • 1 can Rotel with chilies
  • Bacon Bits
  • Green Onions
Instructions
  1. Preheat the oven on to 400 degrees.
  2. Pound your chicken breasts to a nice thin size so they cook faster!
  3. Grill chicken for a few minutes until it is no longer pink...George Foreman Grills work great for this!
  4. When you are done grilling, place the chicken on a foil lined baking sheet.
  5. Top chicken breasts with BBQ sauce first, and then pile on the additional toppings that you want!
  6. Bake in the oven for approx. 5 mins or until cheese is all melty!
