Black Bean Salsa Tacos

These Black Bean Salsa tacos are easy, delicious, and not bad for you, either!

I created this meal after making the BBQ Chicken Salad with Black Bean Salsa from Jamielyn Nye at I Heart Naptime. She created the Salsa recipe, so I’m not in anyway taking credit for it, but after having her BBQ Chicken Salad for dinner one night, I had the bean salsa leftover the next day – and it made for the perfect tacos!

I quickly whipped up a new recipe with her salsa, and with the homemade Cilantro Ranch Dressing as a drizzle on the tacos, they were delicious!  My kind of meal!

Black Bean Salsa Tacos with Cilantro Ranch Dressing
Ingredients
  • 1 can of sweet corn (drained)
  • 1 can of black beans (rinsed and drained)
  • 2 tomatoes
  • 1 red pepper
  • 1-2 limes
  • ¼ cup onion
  • 1 tsp salt
  • 1 tsp sugar
  • ¾ cup cilantro
  • Avocados {optional}
  • Dressing:
  • 11/2 cup ranch dressing
  • ½ cup cilantro
  • 1 juiced lime
  • 1 small tomatillo
Instructions
  1. Combine the corn and beans into a bowl. Dice the onion, pepper, and tomatoes then add them to the bowl. Cut cilantro and add that to the bowl with the salt and sugar. Squeeze fresh lime juice over the top. Stir and enjoy! Easy to make the day before and add to the tacos the next day!
  2. For the Dressing Drizzle:
  3. Combine ranch dressing, cilantro, lime and tomatillo in a blender. Adding a jalapeno is optional for extra heat!
