I’ve always made chocolate dipped pretzels for friends and family during the holidays. My mom even returns her jar every year so she won’t miss out on her share each year. For St. Patty’s Day, I thought about what I could do to be a bit festive, without having to make green eggs and ham!
At Christmas time, I came across a heavenly thing at the grocery store: Chocolate covered Ritz crackers! Sound strange, but trust me -they are delish….and it’s a good thing they were a Limited Edition item in the store – or I would have been in trouble!
So, that got me thinking…what ELSE can I dip in chocolate? Last week I saw these over at Lolly Jane
– and they inspired me to do my own – although nowhere NEAR as pretty or as fun as theirs are, they still taste yummy!!
Pretty simple….and you could do it for any holiday with a simple drop of food coloring and a few fun sprinkles {bling!}
Melt some white chocolate chips in the microwave. Put in a few drops of food coloring and stir! Dip the Oreo in and let the chocolate fill in all the spaces! Toss on a little bling and wait to eat! Let them sit on wax paper to set up. If you need them to set in a jiffy, place in freezer for a bit
A few of these are making their way into the hubs’ lunch box tomorrow – as an early St. Patty’s Day treat – and the rest of the cookies, well, he doesn’t need to know how many I made tonight… 🙂

My favorite recipe of all time – ritz, peanut butter, chocolate candy coating (or what you used for the oreos). Make peanut butter ritz sandwiches then dip in chocolate. Holy Cow! Delish! Simple! Perfect! You will LOVE them!
