When we had friends over Friday for dinner, I had to plan out a meal that was both easy to prep, easy to prepare, and delicious! Mr. Housework wasn’t going to be home until right before they arrived, and I’d have a clingy {almost} one year old crying for me and following my every move. So, I decided Mr. Housework would grill steaks – therefore, leaving me not having to do anything, really! I chopped up a salad and baked some potatoes, but really, I did NOTHING! That’s the BEST! So, in my guilt, I decided to pull out an old family recipe {ok, maybe it came from the April 1980 Sunset magazine} that my mom has passed on to me – Frozen Chocolate Peanut Squares – and get ready for this one – they’re DELICIOUS!
As the weather is getting warm{er} – well, ok, we live in Phoenix – sorry about the rest of you! Anyhow, as the weather warms up, this is the perfect recipe for a little coolin’ off!
This is a layer dessert – takes a bit of time to put together, but it’s totally worth it!!!!
FROZEN CHOCOLATE PEANUT SQUARES
(originally printed in April 1980 Sunset magazine)
3/4 cup butter or margarine
2 c. vanilla wafer crumbs (about 1 box)
2 c. powdered sugar
3 eggs
6 oz. semisweet choc. chips ~ melted
1 1/2 c. salted peanuts, coarsely chopped
1/2 gallon vanilla ice cream ~ slightly softened
(go ahead and buy 1 gallon, because then you can eat the rest!!!!)
Melt 1/4 c. of the butter. mix with crumbs and press over bottom of a 9″x13″ pan. In a large bowl, use mixer to beat together the remaining 1/2 c. of butter and powdered sugar until creamy. Beat in eggs, one at a time, then beat in chocolate until well blended. Fold in 1 c. of the peanuts. Spread mixture over the crust and freeze until chocolate is firm {about 30 minutes}. Spread ice cream over the top. Sprinkle with remaining 1/2 c. of peanuts. Cover and freeze until firm, at least 12 hours. Let stand at room temperature 5-10 minutes before cutting into squares!
