This Cheesy Beef Casserole recipe started out as Porcupines in a Skillet over at 30 Handmade Days Blog.
I found it while blog stalking, and since I LOVE easy meals, I had to try it.
I changed just a few ingredients and amounts, and it was delicious AND easy. The perfect weeknight meal!
Cheesy Beef & Tomatoes
Ingredients
- 1 lb. ground beef
- 1 package dry onion soup mix { I used about 3/4 of the package}
- 1 1/2 cup hot water
- 3/4 cup uncooked rice
- 1 (16 oz) can tomatoes – {I drained 1/2 the juice out}
- 1 cup shredded cheese
- 1 small can mushrooms (optional, but we put them in and like it!}
Instructions
Brown your ground beef in a large pan.
Drain beef and stir in onion soup mix, water, tomatoes, and mushrooms.
Add uncooked rice and stir.
Cover and cook on low heat for 25 minutes or until rice is tender.
Sprinkle with cheese and serve
