How to Make the Lemony Chicken Orzo Recipe

This chicken casserole is easy to make and can be ready within 30 minutes - with things you probably already have on hand!
Ingredients
- 1 lb. chicken breasts
- ½ tsp. each salt & black pepper
- 1 can {14.5. oz.} chicken broth
- ⅓ cup lemon juice
- 2 tsp. honey
- 2½ TB. low-fat sour cream
- ¾ cup orzo
- 8 oz. green beans, cut into 1 -inch pieces
Instructions
- Cut chicken into 1 inch cubes. Sprinkle with salt and pepper.
- Pour broth and lemon juice into a large pot; bring to a boil and add chicken.
- Cover and reduce heat to medium.
- Cook for 9 minutes, or until chicken is cooked through.
- Remove chicken from pot; set aside. Increase heat to high and cook sauce for 5 minutes.
- Stir in remaining ¼ tsp. salt and pepper.
- Whisk in honey and sour cream.
- Add 2 cups water to pot and bring to a boil.
- Add orzo and cook for 10 minutes or until pasta is tender and most liquid has been absorbed.
- Add green beans to pot for final 4 minutes of cook time.
- Stir chicken back into the pot and serve!
I have never had Orzo…I guess this recipe will change that!! Haha!

I made this today and I would change two things:
1. There is a bit too much lemon for me. But if you like it to have a strong lemon flavor, leave it the way it is.
2. You’ll need more orzo for the amount of liquid. It would have been soup if I hadn’t added more orzo.
I agree completely. I probably doubled the orzo and boiled for quite a bit to get rid of the excess fluid.
Just want to make sure you add the 2 cups of water to the pot that has the broth, lemon juice, sour cream, and honey, boil that, then add th orzo. Thanks!
I agree with others that it is quite a bit lemony. I used 3 lemons to get the 1/3 cup. Would use 1/4 cup next time. Did use 1 cup orzo and it was ok. Would add some more. Had to cook longer than 9-10 min in the end, so my vegis were overcooked. Used broccoli and it was a good substitute, but would add it in the last minute or two.
Would a little cheeses be okay to add? Maybe parmesan or mozzarella? Curious how it would do with the lemon. Thanks!
I just wanna say this was amazing! I loved the lemon flavor. Didn’t have sour cream so used goat cheese and a bit of Parmesan…also added crushed garlic in the beginning boil. Gave a nice salty flavor with the lemon. As it’s days before payday lol I didn’t have enough orzo so mixed in spaghetti. Great flavors! Thanks for the idea
