In case you’re like me and you have NOTHING planned for Cinco De Mayo dinner, here are three easy Mexican recipes I can vouch for…I make them regularly here in our house! Â Living in Arizona, we sort of eat Mexican 4 out of 7 nights most of the time! Â If you haven’t eaten yummy Mexican food here in AZ, you haven’t lived yet! Â These recipes are great for Cinco De Mayo, or ANY OTHER NIGHT!
