Chocolate Peanut Ice Cream Squares

This chocolate Peanut Ice Cream Cake is the perfect addition to a summer meal! The mix of chocolate and vanilla along with the salty peanuts is just the perfect treat!
Ingredients
  • ¾ cup butter or margarine
  • 2 c. vanilla wafer crumbs (about 1 box)
  • 2 c. powdered sugar
  • 3 eggs
  • 6 oz. semisweet choc. chips ~ melted
  • 1½ c. salted peanuts, coarsely chopped
  • ½ gallon vanilla ice cream ~ slightly softened
  • (go ahead and buy 1 gallon, because then you can eat the rest!!!!)
Instructions
  1. Melt ¼ c. of the butter. mix with crumbs and press over bottom of a 9"x13" pan. In a large bowl, use mixer to beat together the remaining ½ c. of butter and powdered sugar until creamy. Beat in eggs, one at a time, then beat in chocolate until well blended. Fold in 1 c. of the peanuts. Spread mixture over the crust and freeze until chocolate is firm {about 30 minutes}. Spread ice cream over the top. Sprinkle with remaining ½ c. of peanuts. Cover and freeze until firm, at least 12 hours. Let stand at room temperature 5-10 minutes before cutting into squares!
