Peach and Raspberry Ice Cream

No ice cream machine? No problem with this no-churn alternative! Fresh peaches and raspberries are mixed together with a creamy, light base to create this decadent Summer treat which you will absolutely fall in love with! The hardest part is waiting for it to freeze!

Good Morning! I’m about to make you wish you were having ice cream for breakfast. Sorrynotsorry.

Annie from Annie’s Noms here. After having to take a break from contributing to finish my degree, I’m back and more in love with food than ever 😀

It made me so sad to not be able to get in the kitchen. I could not wait for Uni to be over! As soon as it was, (the very next day actually) I was back in the kitchen developing recipes and trying to improve my food photography. I’ve been back almost 2 months and it’s like I’ve never been away. I’ve made Ice Pops, Loaf Cake, Strawberry Rolls the list goes on!  I still adore the whole process from that first moment when you have an idea, right down to all the hours spent answering comments, emails and pushing my posts on social media! Anyways, back to food…

The baking fairies have not answered my call for an ice cream machine yet, so I had to find an alternative. Enter double cream whipped into soft peaks and mixed with sweetened condensed milk… drool.

I added a little good vanilla, fresh peaches and fresh raspberries to create this light, flavorful Summer treat, which pretty much only requires patience (of which I have none, so you can imagine how hard it was to let this freeze).

The base of this ice cream is creamy, but not overly heavy. I don’t like it when you eat a really creamy dessert and feel a little bleurgh afterwards as it was too rich; whipping the cream into soft peaks creates lightness which results in an ice cream just like the soft scoop you get in the store. I don’t know if any of you have heard/tried Mr Whippy ice cream, but it’s like that, only homemade, so obviously way better 😉

Since raspberry season is in full swing, I thought it only natural to use them in ice cream. Then I thought about which other fruits I could use which would compliment the flavors and decided on peaches. If you read my blog, you’ll know I’m a berry monster and sometimes get stuck in a berry rut. No bad thing for me personally, but when you have a food blog you have to keep it fresh. Just because I might like to see 100 strawberry recipes, doesn’t mean everyone else does! So, my biggest challenge this summer is to USE MORE FRUIT!

I realize I now sound silly… I’m sure some people have some challenges like climbing a mountain or something… I just want to explore different types of fruit. Foodie problems right there.

To make this ice cream is so simple! You only need 5 ingredients (6 if you add sugar) and about 15 minutes to put it all together, then you can get right back to enjoying Summer!

You probably already have the ingredients in your kitchen; and all you have to do is whip the double cream, mix in the condensed milk and vanilla, then fold in the diced peaches and raspberries. Transfer to a 2lb loaf tin, put it in the freezer… Then you just have to wait it out until glorious ice cream is made. Quite possibly the hardest part.

My boyfriend isn’t mad keen on sweet stuff (weirdo) but he absolutely adored this ice cream, he even scraped the bowl and whisk clean and he has NEVER done that the whole time we’ve been together!!

The contrast between creamy, soft ice cream with sweet, yet tart raspberries and peaches is a complete winner!

Now, I’ve put peaches and raspberries together, I’m thinking of 10 billion things I could make… just to add to the 50 billion food related things already going round my head. Oh the life of a food blogger!

So, if you don’t have an ice cream machine, but still want delicious homemade ice cream, then you need to make this ASAP!!

No-Churn Peach and Raspberry Ice Cream

No ice cream machine? No problem with this no-churn alternative! Fresh peaches and raspberries are mixed together with a creamy, light base to create this decadent Summer treat which you will absolutely fall in love with! The hardest part is waiting for it to freeze!

Ingredients

  • 2 cups heavy cream
  • One 14oz can of condensed milk
  • 1/4tsp vanilla extract
  • 1tbsp light brown sugar, optional
  • 1 cup fresh raspberries
  • 1 cup diced, fresh peaches (this was 2 and 1/2 peaches for me)

Instructions

Place the heavy cream into a large bowl or the bowl of your stand mixer and whisk on a medium speed until soft peak. (You want the cream to just hold shape for 5 seconds when you pull the whisk out).
Add in the condensed milk and vanilla extract and mix on slow until combined. Taste and if required, add 1tbsp light brown sugar.
Add in the raspberries and peaches and fold in by hand, just until they're all covered, don't be tempted to over mix.
Pour into a 2lb loaf tin, cover with cling film and place in the freezer for 6-8 hours, until frozen through.
Ice cream will keep, covered, in the freezer for 1 month.

1. If you can, place the bowl and whisk attachment of your stand mixer in the freezer for 10 minutes before starting. I couldn't as my freezer is tiny, but the ice cream still turned out fine.
