My husband’s favorite soup is Olive Garden’s Zuppa Toscana. I’ve searched Pinterest for awhile trying to find one that looked the most “spot on” to their recipe. I found quite a few that I blended together to make my final recipe. Here are two very similar recipes that I used to create my recipe.
I made it last night for my husband’s birthday dinner and in his words, it was “perfect to a tee” to the Olive Garden recipe.
Zuppa Toscana {Copycat Recipe}

Olive Garden’s Zuppa Toscana is a meat and potatoes soup with a light cream base!
Ingredients
- 1 lb. Italian Sausage – ground
- 1 onion, chopped
- ½ tsp. minced garlic
- ½ tsp. red pepper flakes
- 2 Russett potatoes – sliced into very thin pieces {I didn’t peel them, but you can!}
- 2 cups chopped kale
- ¼ cup chopped bacon
- 16 oz. chicken broth
- 1 quart water
- 1¼ cups heavy whipping cream
Instructions
- Brown your Italian sausage in a pan. Drain and set aside.
- Put chicken broth and water into pot.
- Saute onions, potatoes, and garlic for a few minutes {you can use a tiny bit of olive oil or white wine to sauté)
- Add onion mixture into broth/water mixture.
- Cook on medium heat until potatoes are done. (15-20 minutes-ish)
- Add sausage and bacon and simmer for another 10 minutes.
- Turn to low heat.
- Add kale and cream.
- Heat through and serve. Salt and pepper to taste.
I hit a home-run with this recipe and I’m adding it to my recipe box for future meals!
