  Zuppa Toscana {Reasons To Skip The Housework} Copycat Olive Garden My husband’s favorite soup is Olive Garden’s Zuppa Toscana.  I’ve searched Pinterest for awhile trying to find one that looked the most “spot on” to their recipe.   I found quite a few that I blended together to make my final recipe.  Here are two very similar recipes that I used to create my recipe.

      I made it last night for my husband’s birthday dinner and in his words, it was “perfect to a tee” to the Olive Garden recipe.

Olive Garden’s Zuppa Toscana is a meat and potatoes soup with a light cream base!
Ingredients
  • 1 lb. Italian Sausage – ground
  • 1 onion, chopped
  • ½ tsp. minced garlic
  • ½ tsp. red pepper flakes
  • 2 Russett potatoes – sliced into very thin pieces {I didn’t peel them, but you can!}
  • 2 cups chopped kale
  • ¼ cup chopped bacon
  • 16 oz. chicken broth
  • 1 quart water
  • 1¼ cups heavy whipping cream
Instructions
  1. Brown your Italian sausage in a pan. Drain and set aside.
  2. Put chicken broth and water into pot.
  3. Saute onions, potatoes, and garlic for a few minutes {you can use a tiny bit of olive oil or white wine to sauté)
  4. Add onion mixture into broth/water mixture.
  5. Cook on medium heat until potatoes are done. (15-20 minutes-ish)
  6. Add sausage and bacon and simmer for another 10 minutes.
  7. Turn to low heat.
  8. Add kale and cream.
  9. Heat through and serve. Salt and pepper to taste.
