8 Easy Crockpot Recipes

As summer time approaches, I find myself using my crock pot more and more.  I’m always on the lookout for great, easy-to-prep meals that can cook in the crock-pot while I chase the two year old around all day!  Here are 8 great recipes I’ve found that will make your meal planning {and meal prep} so much easier!

This recipe claims to be similar to Cafe Rio Slow Cooker Pork recipes that I’ve seen everywhere.  I’m not lucky enough to have Cafe Rio OR Bajio around me – so this is my only option for trying this delicious looking stuff out!  It looks so summery and light!  It’s going on my next meal plan!

Crock Pot Chicken Fajitas {Stacy Makes Cents}

Anytime I can avoid having to cook chicken breasts for a meal, I’m all over it!  Bring on the easy chicken fajitas!  You could also use this shredded chicken for tostadas, tacos, or a salad!

Cream Cheese Chicken Chili {Plain Chicken}

We are soup/chili fans in this house and I love the fact that I can sneak cream cheese into my husbands meal and he’d have no idea!  This would make for great leftovers and even be great to freeze for later in the month!

Whole Chicken in the Crockpot {100 Days of Real Food}

Fried chicken is something we crave around here – and we live only about 1 mile from Kentucky Fried Chicken – so if I could find a great chicken recipe to make {and have it be an easy crock pot recipe, too…} it would be a major score for all of us!

Cheesy Chicken Spaghetti {Cooking With Kim}

Anything with Velveeta has to be good {ok, not my proudest moment….it’s a bit processed, isn’t it?!?}  but, I love this recipe simply because you don’t have to cook the spaghetti first!  {Hell to the no….YES…} You put the spaghetti in dry….and it ….COOKS……buy itself!  Uh-mazing!

Crock Pot Baked Potatoes {Skip To My Lou}

There is no reason to heat up the oven in the summer for the perfect baked potato – when you can cook them on low for 8 hours in the crock pot.

Dessert – that makes itself – in large batch form….nuff said!

Crockpot Apple Crumble {How Sweet Eats}

I don’t even like cooked fruit and this looks delicious!
